In the Sicilian dialect, "Burdese" means "of Bordeaux," indicating that this wine uses the classic Bordeaux varietals of Cabernet Sauvignon and Cabernet Franc. This wine is characterized by its dense and firm structure and excellent balance.

Grape varieties: Cabernet Sauvignon 70%, Cabernet Franc 30%

Tasting: Reflecting a cool and mild summer, the impression is elegant and delicate. While red fruit and violet aromas were dominant then, they have now transformed into notes of dried cherry, herbs, and a hint of spice. The tannins are soft, with a smooth mouthfeel. This vintage offers an elegant expression of aging, emphasizing balance and refinement over heaviness.

Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic
fermentation. During fermentation, short pump-overs (circulation) are performed twice a day for 10-15 minutes, minimizing stress on the grape skins. The fermentation period is approximately 6-8 days. The temperature is gradually increased from 15-16°C initially, to 20-22°C temporarily, and up to 26-27°C towards the end, with cooling stopped in the final stage to complete fermentation. The wine tanks are filled with field wine, and after 12-15 days of maceration (skin contact) with the skins, the wine is racked. During this maceration period,the temperature is maintained at approximately 20-22°C, and micro-oxygenation (micro-oxygen supply) is performed to dissolve a small amount of oxygen. Malolactic fermentation takes place in stainless steel tanks, after which the wine is thoroughly racked from the lees and transferred to French oak barrels for 16 months of aging. 100% new Allier oak barrels are used for aging.
