商品詳細

In the Sicilian dialect, "Burdese" means "Bordeaux," indicating the use of classic Bordeaux varieties, Cabernet Sauvignon and Cabernet Franc. This wine is characterized by its density, solid structure, and exceptional balance.

Classification: Menfi DOC

Grape Varieties: Cabernet Sauvignon 70%, Cabernet Franc 30%

Tasting Notes: Reflecting concentrated fruit from a hot vintage, the primary notes are ripe blackberry, dried fig, and hints of spice. Currently, dried fruit, bitter chocolate, and faint balsamic aromas emerge, giving it the richness expected from a powerful vintage. The acidity is mellow, and it presents a rich, aged style with integrated warmth from the alcohol and rounded tannins.

Production Method: After harvest, the grapes are destemmed and crushed, then the must is transferred to stainless steel tanks for alcoholic fermentation. During fermentation, pump-overs (circulation) are performed twice a day for short periods of 10-15 minutes, depending on the stage of fermentation, to avoid stressing the skins. The fermentation period is approximately 6-8 days. The temperature is gradually increased from 15-16°C initially, to 20-22°C at one point, and then to 26-27°C at the end, before cooling is stopped to complete fermentation. After alcoholic fermentation, the tanks are filled with wine from the same vineyard, and after 12-15 days of maceration (skin contact) with the skins, the wine is racked. During this maceration period, the temperature is controlled at approximately 20-22°C, and micro-oxygenation (micro-oxygen supply) is performed to dissolve trace amounts of oxygen. Malolactic fermentation takes place in stainless steel tanks, after which the wine is transferred to French oak barrels with its lees for 16 months of aging. 100% new Allier oak barrels are used for aging.

Pairing: Game, braised red meat dishes, and a wide range of foods including aged cheeses.
