Tasting Notes: It presents aromas of dark berries, rose, and mint, with a firm structure and a mellow quality. It has a smooth texture and rich fruit flavors, with excellent aging potential.
Winemaking Method: After destemming, due to the thick skins of Cabernet, pigeage is performed more vigorously than for Sangiovese. Fermentation begins in 50HL stainless steel tanks at 25°C, followed by twice-daily remontage for 6 days starting from the second day. After fermentation, light maceration is performed, and malolactic fermentation takes place in 30HL tanks. Once malic acid has decreased, the wine is racked and allowed to settle for one month. It is then aged in new barrels for approximately two years.
