This Barolo is made from grapes sourced from five of the best single vineyards (Cannubi, Liste, Cannubi San Lorenzo, Fossati, San Pietro delle Viole). Fermentation takes approximately 12 days, starting at 22-25°C and finishing at 29-30°C, followed by 20 days of maceration. It is aged for 4 years in Slavonian oak barrels and then for 6 months in the bottle. This Barolo offers a complex character blended from the unique features of each single vineyard, with a violet-like bouquet and a soft taste.

Tasting Notes: This Barolo offers a complex character blended from the unique features of each single vineyard, with a violet-like bouquet, aromas of nutmeg, cinnamon and red fruits, gentle tannins, and an elegant, soft taste.

Winemaking Method: Grapes are sourced from Borgogno's five best single vineyards (Cannubi, Liste, San Lorenzo, Fossati, San Pietro delle Viole). Fermentation takes place for 12 days, starting at 22-29°C and finishing at 29-30°C. This is followed by 30 days of skin maceration at 29°C. After transferring to barrels, malolactic fermentation occurs at 22°C for 15 days. After clarification, the wine is aged for 4 years in 4,500L Slavonian oak barrels. This is followed by 6 months of bottle aging.

Pairing: Piedmontese risotto (with Barolo-braised meat jus), beef braised in Barolo, aged cheeses.
