For many years, we repeatedly experimented with the desire to create a great wine from Cabernet Franc, a Bordeaux variety from a continental climate that we have carefully cultivated since 1985. We found that in Sicily, with its Mediterranean climate, it ripens without over-ripening and produces incredibly rich and elegant results. Finally, a magnificent wine with the potential for long aging was born. This wine embodies all of the concepts that Planeta strives for: elegance and tradition, family and future, and Sicily, which the Planeta family adores. The name Didacus comes from a name that Diego's father, Vito Planeta, would call Diego when he was naughty and mischievous. In reality, it was Diego's own favorite name. This important wine was thus given the name "Didacus."

Grape variety: 100% Cabernet Franc
Tasting notes: Displays pure fruit aromas of blueberry and plum with hints of spice. The palate is velvety smooth, with perfectly ripe, dense, and concentrated tannins. A smooth-drinking, exceptionally complex wine worthy of aging.
Production method: After harvest, grapes are cooled to 8-11°C for 16-24 hours, then sorted on a table with 2-2.5% removed. After destemming, a final meticulous selection is made. The grapes are then transferred to tanks and wooden barrels. Fermentation occurs in three separate ways—in large barrels (tonneaux), small barrels (barriques), and stainless steel—at 18-24°C with selected yeasts. Barrel aging: Uses oak barriques from Saury and Seguin Moreau; 70% in new oak, 30% in second-year barrels. Batonnage is performed every two weeks.
