Planeta's Santa Cecilia, produced in Noto, the heartland of Nero d'Avola, is a consistently great wine that honestly expresses Nero d'Avola. Elegant, powerful, and balanced with typical Sicilian aromas, Santa Cecilia has become the benchmark for red wines made from indigenous Sicilian grape varieties.

Grape variety: 100% Nero d'Avola

Tasting: A brilliant deep ruby red with rich fruit aromas of raspberry and dried fruit, fresh aromas of lavender and rosemary. It consistently offers rich fruitiness and a Mediterranean character, with a rich and elegant taste. The smooth and creamy texture, accompanied by velvety tannins and fresh acidity, provides a pleasant sensation and a long finish.

Production method: After harvesting, the grapes are destemmed and crushed, and the juice is transferred to stainless steel tanks for alcoholic fermentation. Depending on the fermentation stage, short pump-overs (circulation) are performed 3 times a day for 10-25 minutes to minimize stress on the skins and enhance the wine's complexity. The fermentation period is approximately 7-8 days. Initially, it is kept at 14-15°C, and towards the end, cooling is stopped, and the temperature is raised to 24-25°C to complete the alcoholic fermentation. After alcoholic fermentation, the tank is filled with wine from the same vineyard, and long maceration (skin contact) is carried out for 28-35 days before racking. Malolactic fermentation is always carried out in stainless steel tanks, maintaining a temperature of approximately 20-21°C. Afterwards, the lees are removed, and the wine is transferred to French oak barrels for aging from December to January, where it matures for 14 months. French oak barrels are used for aging (15% new barrels, 28% 2nd-fill barrels, 28% 3rd-fill barrels, 29% 4th-fill barrels).
