商品詳細
To celebrate the 30th anniversary of Sassoalloro, Castello di Montepo's flagship wine, we have created "Sassoalloro Oro." "Sassoalloro Oro" is a wine that Jacopo and Tancredi, together with winemaker Donato Lanati, have been researching for several years, and it has finally come to fruition.
The grapes used in "Sassoalloro Oro" are Sangiovese Grosso BBS11, a clone from the Biondi Santi family. We select vines that are over 15 years old and grown in a wonderfully sunny vineyard.
The vineyard management and winemaking techniques have enhanced the uniqueness of the Galestro plot dedicated to Sangiovese Grosso BBS11.
Through specially designed barrels, controlled fermentation temperatures, and the use of 28.5hl Slavonian oak barrels in addition to traditional barriques, we have succeeded in producing a pure Sangiovese-style wine. This wine is completed after more than 6 months of bottle aging in a temperature-controlled environment.
Classification: Toscana Rosso IGT
Grape Variety: 100% Sangiovese Grosso BBS11
Tasting Notes: A ruby red characteristic of Sangiovese. It has elegant aromas of cherry and violet, followed by forest-like notes from the oak barrels. There are also spicy aromas. The tannins are silky and very concentrated, yet fresh, making for a very well-balanced wine. The flavors of BBS11 make the wine very harmonious and elegant.
Winemaking Method: The grapes are destemmed and crushed before fermentation in stainless steel tanks. During fermentation, remontage and délestage* are performed. After racking on October 12th, malolactic fermentation took place in stainless steel tanks. MLF finished in December, and the wine was aged for approximately 16 months in 28.5hl Slavonian barrels and 225L barriques. Assemblage and bottling took place on May 26th.
Pairing: Traditional Tuscan cuisine (especially roasted game meats), medium-aged cheeses.
