Alessio, a winemaker, had a strong desire to produce high-quality white wine using indigenous Southern Italian grape varieties that could stand alongside the world's renowned white wines. He experimented by planting various grapes in Sicily. Using Fiano, an ancient noble variety native to Campania, which he himself loved, he experimentally produced this Cometa in the 1990s. The result was a remarkably tropical and captivating wine. It was named "Cometa" (Comet) as a wine that was born suddenly, like a shining star. The unique character of the varietal, combined with the Sicilian terroir, creates a one-of-a-kind wine with dense and fruity aromas, excellent structure, and minerality. Today, it is considered one of the most important white wines of Southern Italy.

Classification: Menfi DOC

Grape Variety: Fiano 100%

Tasting Notes: A clear, brilliant yellow color. Tropical aromas of white peach and lychee intertwine with Mediterranean herbaceous notes of lavender and oregano, and spicy hints of ginger, creating an enchanting impression. The palate offers rich fruit flavors reminiscent of ripe nectarine and apricot, a full-bodied and rounded texture, resulting in an elegant and ample wine. The finish is long, with the characteristic varietal aromas lingering in the mouth. It possesses dense, fruity aromas, excellent structure, and minerality.

Production Method: Grapes are hand-harvested, destemmed, and pressed. 90% of the must is fermented in stainless steel tanks, and 10% in 225-liter oak barrels, both at 15°C for 10 days. Each is aged on its lees for five months in oak barrels and stainless steel tanks, respectively. The wine from the barrels is then transferred to stainless steel tanks for blending and aged for an additional month. It is then bottled and aged in the bottle for three months.

Pairing: Seafood, mushroom dishes, duck, aged cheeses, etc.
