商品詳細
On the hills near Lake Garda, known as "Costasera," are the best vineyards in the Valpolicella Classica region, where the grapes used to produce high-quality Amarone are harvested. Thanks to long hours of sunshine and the reflection of sunlight from the lake, the vineyards enjoy a consistently warm climate.
With its rich aroma of ripe fruit and robust structure, Costasera is said to be capable of long-term aging for up to 35 years.
Classification: Amarone della Valpolicella Classico DOC, Amarone della Valpolicella Classico DOCG (from 2010)
Varieties: Corvina 70%, Rondinella 25%, Molinara 5%
Tasting Notes: It offers a rich aroma of dark ruby and ripe plum and cherry. Full-bodied on the palate, with spicy notes of cinnamon and vanilla, harmoniously balanced with smooth tannins. The intense fruitiness and firm structure lead to a long finish, resulting in an elegant wine.
Production Method: Grapes harvested from late September to early October are air-dried for one month on bamboo racks in a special drying shed with a NASA (Natural Air-Drying Assistance System). Noble rot only forms on Corvina grapes. After 45 days of natural cold fermentation (14°C) in large Slavonian oak barrels or stainless steel tanks, the wine is transferred to 30-40 hl barrels where alcoholic fermentation and malolactic fermentation continue for 35 days using alcohol-tolerant yeast. 80% of the wine is aged for 24 months in large Slavonian oak barrels (40-80 hl), and 20% in small Allier and Slavonian oak barrels (600L, 40% new, 30% 2-year-old, 30% 3-year-old). Minimum aging in barrels is 4 months.
