On the hills along Lake Garda, often called "Costasera" due to the beautiful sunsets, lie some of the best vineyards in the Valpolicella Classica region. From grapes harvested in these vineyards, which enjoy long hours of sunshine and a warm climate due to the reflection from the lake, high-quality Amarone is produced.

Costasera, with its rich aroma of ripe fruit and firm structure, is said to be capable of long-term aging for 35 years.

Classification: Amarone della Valpolicella Classico DOC, Amarone della Valpolicella Classico DOCG (from 2010)

Varieties: Corvina 70%, Rondinella 25%, Molinara 5%

Tasting Notes: Fermentation with yeast for 45 days. Aged for 2 years in large oak barrels. Bright and clear ruby red, with violet hues at the rim. A powerful and attractive bouquet of cherry preserves and plum jam with spicy cinnamon. On the palate, soft and delicate tannins spread with sweetness. The balance between alcohol content and excellent acidity is well-maintained, leading to a long and powerful finish with fruitiness and sweet spices.

Production Method: Grapes harvested from late September to early October are air-dried for one month on bamboo racks in a special drying shed equipped with the NASA (Natural Appassimento System for Grapes). Botrytis cinerea only develops on the Corvina variety. After 45 days of natural cold fermentation (14°C) in large Slavonian oak barrels or stainless steel tanks, the wine is transferred to 30-40 hl barrels where alcoholic fermentation and malolactic fermentation continue for another 35 days using strong alcohol-tolerant yeast. 80% is aged for 24 months in large Slavonian oak barrels (40-80 hl), and 20% in small Allier and Slavonian oak barrels (600L, 40% new, 30% second-use, 30% third-use barrels). Minimum of 4 months of bottle aging.
