商品詳細
The "Costasera" hills, overlooking Lake Garda, are home to the finest vineyards in the Valpolicella Classica region. From grapes harvested in these vineyards, which benefit from long hours of sunshine and sunlight reflected off the lake, creating a consistently warm climate, high-quality Amarone is produced.
With its rich aroma of ripe fruit and robust structure, Costasera is said to be capable of long-term aging for up to 35 years.
Classification: Amarone della Valpolicella Classico DOC, Amarone della Valpolicella Classico DOCG (from 2010)
Grape varieties: Corvina 70%, Rondinella 25%, Molinara 5%
Tasting Notes: Fermentation with yeast for 45 days, 60% aged in large 30-40HL Slavonian oak barrels, and the remaining 40% aged in 600L Slavonian oak barrels for 3 years. It presents a very viscous, matte red color. A complex bouquet of baked fruit, cinnamon, and nuts unfolds. The taste of cooked cherries and sweet spices is very soft and alluring, with a perfect harmony of acidity and soft tannins, resulting in a very elegant wine.
Production Method: Grapes harvested from late September to early October are air-dried for one month on bamboo racks in a special drying shed with NASA (Natural Air-Drying System for Grapes). Botrytis cinerea only affects the Corvina variety. After 45 days of natural low-temperature fermentation (14℃) in large Slavonian oak barrels or stainless steel tanks, the wine is transferred to 30-40 hl barrels for an additional 35 days of alcoholic and malolactic fermentation using alcohol-tolerant yeast. 80% is aged in large Slavonian oak barrels (40-80 hl) and 20% in small Allier and Slavonian oak barrels (600L, 40% new, 30% second-use, 30% third-use) for 24 months. Minimum of 4 months of aging in barrel.
