商品詳細
The Riserva's first vintage was in 2003. By featuring Oseleta, an ancient grape variety from Veneto, it achieves a deep color and tannins.
The appassimento process lasts for over 120 days, and barrel aging for 38-40 months, which is longer than typical Amarone. It is a well-balanced wine with powerful yet soft tannins. It has a long finish and a bittersweet aftertaste reminiscent of chocolate. It was awarded Wine of the Year at the 2018 Food and Travel Italia Awards.
Classification: Amarone della Valpolicella Classico DOCG
Grape varieties: Corvina 70%, Rondinella 15%, Oseleta 10%, Molinara 5%
Tasting: Deep ruby red color. Intense aromas of ripe plums and cherries. It is a powerful yet well-balanced wine with soft tannins. It has a long finish and an aftertaste of chocolate. It can age for 30-35 years.
Winemaking Method: Grapes are harvested from late September to early October and rigorously selected, then air-dried on bamboo racks in a special attic utilizing the NASA (Natural Air-Drying System for Grapes) until mid-December. This reduces grape weight by 40%, intensifying aromas and sweetness. Botrytis cinerea only affects the Corvina variety. Natural cool fermentation takes place in large oak barrels or stainless steel tanks. The wine is then transferred to 30-40hl barrels for 35 days of alcoholic fermentation, followed by malolactic fermentation. Aging occurs for 38-40 months in 600L Slavonian oak barrels and Allier oak barrels (1/3 new, 1/3 second-use, 1/3 third-use).
Pairing: Meat dishes, game, aged cheeses
