Appassimento was extended to over 120 days, and barrel aging to 38-40 months, longer than regular Amarone. This is a well-balanced wine with powerful yet soft tannins. It has a long finish with a bittersweet chocolate-like aftertaste.

Rating: Amarone della Valpolicella Classico DOCG

Grape varieties: Corvina 70%, Rondinella 15%, Oseleta 10%, Molinara 5%

Tasting: A special wine made from only carefully selected grapes, matured longer than regular Costasera. The glass reveals concentrated fruit aromas of black cherry, prune, and dried fig, layered with notes of cocoa, sweet spices, and a hint of vanilla. On the palate, it has a very rich body and fine tannins, with a perfect harmony of fruity depth and oak-derived complexity. This Amarone Riserva, with the mature fruit and power characteristic of the 2015 vintage, offers a long finish and an elegant, refined feel.

Winemaking method: Grapes are harvested from late September to early October, and carefully selected grapes are air-dried on bamboo racks in a special attic operating NASA (Natural Appassimento System) for two and a half months. The grape weight decreases by 40%, increasing aroma and sweetness. Noble rot only affects the Corvina variety. Natural cold fermentation takes place in large oak barrels or stainless steel tanks. Alcoholic fermentation then occurs for 35 days in 30-40hl barrels, followed by malolactic fermentation. Aging takes place for 38-40 months in 600L Slavonian oak barrels and Allier oak barrels (1/3 new, 1/3 second-use, 1/3 third-use).

Pairing: Meat dishes, game, aged cheeses
