The appassimento period is over 120 days, and barrel aging is between 38 and 40 months, which is longer than typical Amarone. This is a balanced wine with powerful yet soft tannins. It has a long finish with a lingering bittersweet chocolate aftertaste.

Tasting: Deep, dark ruby color. Elegant and intense aromas of ripe berries and spirits-soaked fruit, along with delicate hints of cocoa and cinnamon. The palate is firm and full-bodied, with silky tannins, smooth alcohol, and fresh acidity providing balance. A long finish lingers with flavors of marasca cherry and cinnamon.
Production method: Grapes are harvested at the end of September to early October, and carefully selected grapes are dried for two months on bamboo racks in a special attic operating a NASA (Natural Air Drying System for Grapes). The grape weight is reduced by 40%, increasing aroma and sugar content. Botrytis cinerea only develops on the Corvina variety. Natural low-temperature fermentation takes place in large tanks or stainless steel tanks. Alcohol fermentation is carried out for 35 days in 30-40hl barrels, followed by malolactic fermentation. Aging is done in 600L Slavonian oak barrels and Allier oak barrels (1/3 new barrels, 1/3 two-year-old barrels, 1/3 three-year-old barrels) for 38-40 months.
