Appassimento is longer than normal Amarone, lasting over 120 days, and barrel aging is between 38 and 40 months. A balanced wine with strong yet soft tannins. It has a long finish and a lingering bittersweet aftertaste like chocolate.

Varieties: Corvina 70%, Rondinella 15%, Oseleta 10%, Molinara 5%
Tasting: Fermentation with yeast for 45 days. Aged in oak barrels for 38-40 months. A deep, matte dark red with bright edges still showing youthfulness. Strong balsamic nuances and a powerful, attractive aroma of ripe fruits and jam. Soft, ripe baked fruits and tannins from the Oseleta variety blend in the mouth. Enjoy a long, attractive finish.
Winemaking: Grapes are harvested from late September to early October, carefully selected, and air-dried on bamboo racks for two and a half months in a special attic equipped with NASA (Natural Grape Drying Enhancement System). Grape weight decreases by 40%, increasing aroma and sugar content. Botrytis cinerea only affects Corvina grapes. Natural cold fermentation occurs in large oak barrels or stainless steel tanks. Transferred to 30-40hl barrels for 35 days of alcoholic fermentation, followed by malolactic fermentation. Aging takes place for 38-40 months in 600L Slavonian oak barrels and Allier oak barrels (1/3 new, 1/3 second-use, 1/3 third-use).
