Appassimento lasts over 120 days, and barrel aging lasts between 38 and 40 months, which is longer than typical Amarone. It's a well-balanced wine with powerful yet soft tannins. It has a long finish with a bittersweet, chocolate-like aftertaste.

Varieties: Corvina 70%, Rondinella 15%, Oseleta 10%, Molinara 5%
Tasting: A deep ruby color with a slight garnet shimmer. The aroma combines ripe cherries and plums with nuances of sweet spices and bitter cocoa. Full-bodied, with firm tannins and well-balanced acidity harmonizing on the palate, and complex flavors of dried fruit and licorice. The long finish is elegant, and this vintage promises further evolution with aging.
Winemaking: Grapes are harvested from late September to early October, and carefully selected grapes are air-dried for two and a half months on bamboo racks in a special attic equipped with NASA (Natural Airflow System for Appassimento). The grape weight is reduced by 40%, increasing the aroma and sugar content. Only the Corvina variety develops noble rot. Natural low-temperature fermentation takes place in large concrete tanks or stainless steel tanks. The wine is then transferred to 30-40hl barrels for 35 days of alcoholic fermentation, followed by malolactic fermentation. Aging takes place in 600L Slavonian oak barrels and Allier oak barrels (1/3 new, 1/3 second-use, 1/3 third-use) for 38-40 months.
