Appassimento lasts over 120 days, and barrel aging is between 38 and 40 months, longer than typical Amarone. This is a well-balanced wine with powerful yet soft tannins. It has a long finish and a bittersweet aftertaste reminiscent of chocolate.

Varietals: Corvina 70%, Rondinella 15%, Oseleta 10%, Molinara 5%

Tasting Notes: Deep garnet color. The aroma features notes of dried cherry, plum, and violet, layered with spices like cinnamon and nutmeg, and a subtle hint of cocoa. This full-bodied wine offers a harmonious balance of firm tannins and rich acidity, with flavors of blackberry and dark chocolate. The finish is long, and as an elegant and refined Amarone, it shows excellent aging potential.

Winemaking Method: Grapes are harvested from late September to early October and carefully selected before being air-dried on bamboo racks for two and a half months in a special attic operating with the NASA (Natural Air Drying Assistance System). The grape weight reduces by 40%, increasing aroma and sugar content. Botrytis cinerea only develops on the Corvina variety. Fermentation occurs naturally at low temperatures in large vats or stainless steel tanks. The wine is then transferred to 30-40hl barrels for 35 days of alcoholic fermentation, followed by malolactic fermentation. Aging takes place for 38-40 months in 600L Slavonian oak barrels and Allier oak barrels (one-third new, one-third two-year, one-third three-year).
