With further aging, its complexity and elegance become more pronounced. It can be aged for 40 years.

Rating: Amarone della Valpolicella Classico DOCG

Grape varieties: Corvina 70%, Rondinella 25%, Molinara 5%

Tasting: Fermentation with yeast for 40 days. Aged for 3 and a half years in 20hℓ Slavonian oak barrels. Deep ruby red with garnet hues at the rim. Powerful aromas of baked fruit and alcohol intricately blend with nuances of almond and dried fruit. A firm acidity gives the wine its youthfulness. Lively acidity with notes of cinnamon and chocolate provide a balanced, long finish.

Winemaking method: Grapes harvested at the end of September or beginning of October are air-dried on bamboo racks in an attic with large windows until mid-February. Only Corvina grapes develop noble rot. Afterward, natural cold fermentation takes place in large Slavonian oak barrels for 45 days, followed by malolactic fermentation. Aging is done for 36 months: 60% in 30-40hl large Slavonian oak barrels, and 40% in 600L Slavonian oak barrels and Allier oak barrels (new, 2-year-old, 3-year-old, and 4-year-old). Minimum 6 months of bottle aging.

Pairing: Ideally enjoyed on its own as a digestif. Also pairs well with red meat dishes, game dishes such as quail, and aged cheeses like Parmigiano and Pecorino.
