Dessert wine made using the traditional Appassimento method

Grape varieties: Corvina 70%, Rondinella 20%, Molinara 10%

Tasting notes: A dessert wine characterized by aromas of ripe fruit with nuances of cinnamon and cloves, a smooth and warm taste, and a crisp acidity.

Winemaking method: Made using the traditional appassimento method (drying grapes). Hand-picked grapes are air-dried on well-ventilated bamboo racks until mid-January. By January, the grapes lose 35-40% of their weight, and the aroma intensifies due to the action of noble rot and other factors, concentrating the sugar content. (Noble rot only affects Corvina.) The grapes are then carefully pressed and destemmed, followed by natural cold fermentation in Slavonian oak barrels for approximately 40 days. The wine is then racked off and transferred to 25hl barrels for 1-2 years of aging, during which malolactic fermentation occurs, resulting in a balanced sweetness. Aged for 6 months until bottling.

Pairing: Perfect as an after-dinner drink, with fruit desserts, shortbread, panettone, and blue cheeses such as Gorgonzola.
