Tasting Notes: Aton embodies timeless sophistication and elegance, presenting a deep ruby color. It is characterized by notes of blackberry, a hint of licorice, and a subtle smokiness, creating a powerful yet exceptionally elegant wine. Concentration and minerality fill the palate, leading to a spicy and long finish. The 2019 vintage, in particular, stands out for its complexity, structure, and excellent balance, making it an exceptional vintage.

Production Method: After careful hand-harvesting, the whole berries are placed into fermentation tanks. This is followed by 5 days of cold maceration and 15 days of fermentation at 23°C. The wine is aged for 12 months in French oak barrels, then for an additional 12 months in stainless steel tanks. Bottling took place unfiltered in early November 2021, and after bottle aging, it was released in April 2024.
