During fermentation, short pump-overs (circulation) are performed 2-3 times a day for 15-20 minutes to enhance the wine's complexity while minimizing stress on the skins. The fermentation period is approximately 6-8 days. The temperature is gradually increased, starting at around 16°C, aiming for 20-22°C, and reaching 25-26°C towards the end, at which point cooling is stopped to complete fermentation. After fermentation, the wine is racked to remove the lees and transferred to French oak barrels for 14 months of aging. Malolactic fermentation occurs entirely in the barrels.
