Malolactic fermentation is stopped before completion. Verduzzo, on the other hand, is harvested in late September and left to appassimento (semi-dry) on racks for three weeks. After cold maceration (at 5°C for 36 hours), it is fermented in stainless steel tanks, then undergoes malolactic fermentation in barriques. The Pinot Grigio is aged in stainless steel tanks for three months, and the Verduzzo is aged in barriques for three months. They are then blended and bottled.
