Ripe red fruits, rose hips, dried herbs, and subtle notes of cedar and spice harmoniously combine. The balanced acidity, reflecting a stress-free growing environment, and rounded, silky tannins spread smoothly across the palate. The fruit flavor has gently matured, and the umami and minerality support a long finish, showcasing a classic balance. This is a refined and mature vintage, revealing a quiet perfection brought about by time.\u003c\/p\u003e\n\u003cp\u003eProduction Method: The harvested grapes are placed in small 14kg boxes, chilled to 10℃, then sorted by hand. After destemming only, without crushing, they are transferred to concrete tanks to begin alcoholic fermentation. Fermentation proceeds while gradually raising the temperature to 26℃, with light manual pigeage (punching down) for 13 days on the skins. Afterward, they are pressed using a basket press.
