The balanced acidity, reflecting a stress-free growing environment, and rounded, silky tannins spread smoothly across the palate. The fruitiness is gently matured, with umami and minerality supporting a long finish in a classic balance. This is a refined, mature vintage that reveals a quiet perfection brought by time.\u003c\/p\u003e\n\u003cp\u003eProduction Method: The harvested grapes are placed in small 14kg boxes, cooled to 10°C, and then hand-sorted. After destemming only, without crushing, they are transferred to concrete tanks to begin alcoholic fermentation. Fermentation proceeds with the temperature gradually rising to 26°C, with light manual pigeage (punching down the cap), and maceration on the skins for 13 days. Afterwards, they are pressed with a basket press.
