The next morning, they undergo strict selection, and whole clusters are pressed, but only the best 50% of the juice from the central part is used. Fermentation takes place in barriques for 9 days, followed by 10 months of aging in French oak (80% new barrels). Two-thirds of the wine also undergoes malolactic fermentation.
