Botrytis cinerea only develops on the Corvina variety. After that, natural cold fermentation takes place for 45 days in large Slavonian oak barrels, followed by malolactic fermentation. For aging, 60% of the wine is aged for 36 months in 30-40hl large Slavonian oak barrels, and 40% in 600L Slavonian oak barrels and Allier oak barrels (new, 2-year, 3-year, and 4-year old barrels).
