Aging takes a minimum of 18-24 months in French or old Slavonian oak barrels, which imparts a subtle rather than overpowering oak aroma to the wine, giving it a balanced flavor. Grapes harvested from four different vineyards with varying altitudes and orientations, all having clay-rich soil, are vinified separately. After soft pressing, only the first-pressed juice is used. Fermentation typically takes place in stainless steel tanks for 18-25 days using natural yeast.
