In 1985, Planeta's journey through Sicily began with the planting of four hectares of Chardonnay in Ulmo. Didacus is a "super Chardonnay" made exclusively from carefully selected grapes from those first Chardonnay vines planted in 1985, with meticulous attention paid to the yeast and barrels used. It is a special wine dedicated to the founder, Diego Planeta. The name Didacus originated from Diego's father, Vito Planeta, who would call Diego by this name when he was angry at him for being too mischievous and naughty; in reality, it was Diego's own favorite name. Thus, this important wine was named "Didacus." It is a masterpiece widely praised as Italy's finest Chardonnay, possessing a strong Sicilian identity.

Grape variety: 100% Chardonnay

Tasting: Brilliant golden color, with a complex aroma blending pineapple, citrus, vanilla, and honey. It offers expansive fruitiness and an enveloping taste. The acidity is firm and fresh. It is a great wine with an international style yet a distinct Sicilian character.

Production method: Grapes are carefully hand-picked in late August, then chilled to 8°C after harvest and left overnight. The next morning, they undergo strict selection, and whole bunches are pressed, but only the best 50% of the juice from the core is used. Fermentation takes place in barriques for 9 days, followed by 10 months of aging in French oak (80% new barrels). Two-thirds of the wine also undergoes malolactic fermentation. Subsequently, it is aged in the bottle for 12 months.
