The grapes are then carefully pressed and destemmed, followed by natural cold fermentation in Slavonian oak barrels for approximately 40 days. The wine is then racked off and transferred to 25hl barrels for 1-2 years of aging, during which malolactic fermentation occurs, resulting in a balanced sweetness.
