Tasting Notes: Visually, it is a pearl pink with a luster reminiscent of oyster mother-of-pearl. The aroma combines baked goods, cassis, and Sicilian wild strawberries, with deep nuances of plum and pineapple. The palate is very supple, with a pleasant accent of subtle acidity. Its balanced and never-tiring flavor leaves an extremely pleasant finish, inviting the next sip.

Production Method: The grapes are destemmed and gently pressed with 1-2 hours of maceration. The juice is refrigerated overnight, then selected yeasts are added. Fermentation takes place in stainless steel tanks.

Pairing: As an aperitif, it pairs well with roasted almonds, high-quality potato chips, and Nocellara del Belice olives. It also makes an excellent pairing with Sicilian street food, fried seafood, and other seafood dishes. Its charm is further enhanced in a seaside setting.
