Modello is an everyday wine enjoyed by the people of Venice. While it's an entry-level wine that's easy to enjoy, it's also vegan-friendly, using bentonite as a fining agent instead of egg albumin or animal-derived casein.

Grape Varieties: Merlot 60%, Refosco, Raboso 40%
Tasting Notes: Complex aromas of ripe red fruits and spices. The balance between refreshing acidity and soft tannins is appealing. Flavors of cherry and raspberry lead to an enjoyable finish. Despite its firm structure, it is an easy-drinking daily wine from the Veneto region.
Winemaking Method: Each grape variety is harvested separately when fully ripe, followed by a short period of maceration. Fermentation takes place without skin contact at 15°C to 24°C, and fermentation is halted by lowering the temperature. After racking, the wine is aged in Slavonian and Allier oak barrels for approximately 4 months, followed by 1 month of bottle aging.
Pairing: It pairs well with any dish, but is particularly excellent with soups, pasta, risotto, red meat dishes, and fresh cheeses.
