It has delicate, persistent bubbles and creamy bread aromas, along with notes of orange and spice. It is characterized by delicate, smooth bubbles and a balanced acidity with nuances of apple and pear. (Metodo Classico / Champagne method)

Grape varieties: Chardonnay 60%, Pinot Noir 40%
Tasting: Bright straw yellow with a green tint at the edges and delicate, persistent bubbles. Pleasant aromas of creamy bread, orange, and spices. It is characterized by delicate, smooth bubbles and a balanced acidity with nuances of apple and pear.
Production method: To preserve fresh aromas, dry ice is added during pressing. After 18 hours, decantation is performed, followed by yeast inoculation and fermentation at 14°C, leading to MLF. The wine is aged on its lees in stainless steel tanks until June. Pinot Noir and Chardonnay are blended, and sugar is added to achieve the necessary 2% alcohol increase, along with the inoculation of Saccharomyces bayanus yeast to create 6 atmospheres of pressure in the bottle. Aged in bottle on lees for a minimum of 36 months. Riddling every six weeks.
Pairing: Aperitif, raw or marinated fish dishes, fried fish and vegetables, chicken salad, and raw spring vegetables.
